The Best Almond Butter Bar Recipe

The school year is almost here or is already here for some of you. Yikes! Where did summer go? It flew by for us, too. The air at night is cool and brisk here in Northern California perfect for sleeping at night. Growing up in the midwest, Fall has always been my favorite season. I am so looking forward to pulling out my crock pot and starting soup and chili season.

We also just pulled out all of our Fall books per my daughter’s request. In one book, she asked why the leaves were different colors. 😕 Well, if we still lived in MI it would probably be much easier to explain. Although, we do get some color change here, it pales in comparison to MI… where Fall tours is a real thing.

One thing, not hard to explain is a great snack recipe. Both of my kids love to be in the kitchen. I have so many cherished memories of baking with my own mom, I’m filled with joy when I can recreate these memories with own cuties. Their favorite part is “taste testing.” 🙂

A few weeks ago, we made these really simple Almond Butter Bars and they were an instant hit. Think warm banana bread infused with creamy almond butter.

I had a first with these almond butter bars. They turned out exactly how I envisioned them, the first time I made them. That never happens! Usually, I’m refining my recipe a couple of times until all the flavors, texture and taste is just right. So, you can imagine my excitement when my creative thought process formed moist, sweet almond butter bars that not only tasted amazing but also stayed together.

I have already made these bars too many times to count. They are truly the Best Almond Butter Bar Recipe. It’s a great healthy recipe that is filling. Perfect for a snack or breakfast food that will definitely be our new “go to” recipe in our home. I like them best a little warm to bring out the banana and honey flavors and then topped with more honey and almond butter. My kids loved them cold straight out of the fridge.

The Best Almond Butter Bar Recipe

Yield: 12 -14
  • 2 cups of almond butter (no sugar added)
  • 4 bananas (ripe but not brown)
  • 1/2 cup coconut flour
  • 1/4 cup honey
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  1. Preheat oven to 325
  2. In a large mixing bowl, add almond butter, bananas and honey and mix well.
  3. Next, add in baking powder, vanilla, and coconut flour.
  4. Pour almond butter mixture into a greased or 9x9 parchment paper lined baking pan and spread evenly.
  5. Bake for 25 minutes or until fork clean.
  6. Let bars sit and cool before cutting into them.
  7. Serve warm.

*Store in the fridge in a sealed container to keep moist. They keep up to 3 days.
