Pumpkin Chocolate Chip Cookies – Dairy-free & Gluten-free

Pumpkins, spice and everything nice! Fall is by far my FAVORITE season. First, because it’s absolutely gorgeous in the mitten. The leaves are changing into vibrant colors, the weather is still warm but not nearly as humid so spending time outdoors is still a joy and my birthday is in November. πŸ˜‰

We are big pumpkin fans. In the Fall, I always try to have an extra can or two of pumpkin on hand as you never know when you want to whip a Fall flavor goodie in the kitchen. The more I work with pumpkin the more I realize how versatile it really is. I feel like I have just scratched the surface.

Β Pumpkin Chocolate Chip Cookies

One large pumpkin Chocolate Chip Cookies ( Vegan & Gluten-free)

This cookie is the essence of fall with chocolate chips thrown in for fun. It’s a the type of cookie you can serve after your children’s afternoon nap without worrying about spoiling their dinner. It’s also the perfect cookie to eat with a nice glass of cold milk.

This cookie is all about utilizing pumpkin, spices, and oatmeal sweetened with maple syrup. It should almost be named the Pumpkin Chocolate Chip muffin because it’s consistency is so soft and moist. If you like soft bake cookies than this recipe is for you.

These Pumpkin Chocolate Chip Cookies are soft and chewy. They are the perfect blend of pumpkin, oats & chocolate chips. Gluten-free & Dairy-free.

Yield: 20
  • 1 1/2 cups gluten-free oats
  • 3/4 cup pumpkin puree
  • 1/2 cup ground flax meal
  • 1/2 cup soy milk
  • 1/2 cup maple syrup
  • 1/2 cup dairy-free mini chocolate chips
  • 2 eggs
  • 1 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1/2 tsp. sea salt
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, measure out gluten-free oats, flax meal, baking powder, sea salt and cinnamon. Mix well.
  3. Add in pumpkin puree, eggs, vanilla, milk and maple syrup.
  4. Once cookie mixture is well mixed, stir in chocolate chips.
  5. Scoop cookie mixture on greased cookie sheet.
  6. Bake cookie mixture for 15 minutes or until fork clean.

  1. I made these and liked the taste but they were very wet when I put them in the oven. I cooked them for at least twice as long as instructed and they are extremely soft. Is that how they are supposed to be?

    1. Hi Hardee, I’m so glad you like the cookies. Yes, this cookies are supposed to be soft and chewy. They should still hold together after baking but not at all crispy. Hope that answers your question! Thanks for sharing.
