My daughter, Emma’s favorite color is pink. Any shade of pink will do. Pale, dark or hot pink…the more pink the better. As you can imagine, Emma has been excitedly asking if it’s Valentine’s Day almost every day. Thank goodness it’s just around the corner.
For us, Valentine’s Day is filled with fun heart shaped rolled out cookies completed in shades of pink frosting. Pink + cookies = my daughter breaking out into dance. Little brother doesn’t have a color preference but if there’s cookies then he’s in.

Last year, I tried a few different gluten-free and dairy-free sugar cookie recipes that completely failed when I tried make them into cut out cookies. In fact, one recipe was such a fail that I converted the recipe into this Sugar Cookie Cupcake recipe! The cupcakes are finger lickin good. Moral of the story – dessert ingredients are always redeemable.
This year, I skipped the frustration and hassle and bought Pamela’s Sugar Cookie mix. It’s really good. I made some for a Christmas party and no one knew the difference. And as you can see, they make great dough for cut out cookies.
Now, some of you may know that when it comes to dairy-free frosting the choices are pretty limited. The options are chocolate or vanilla or vanilla and chocolate. 🙁
I’m not into artificial food dyes at all. I don’t buy food with any type of artificial food dyes because I’ve done enough research to compel me to avoid them. The debate continues on whether artificial food dyes are good or bad and frankly it’s not one I want to take time to write about. For me, it isn’t a big deal to find alternatives to food coloring like this one from India Tree. But I’ll warn you that natural food colorings can be pricey just like anything else that is healthy. So, if you only need one color and that color happens to be PINK than this recipe will save you some moolah and time looking!
As you look at the recipe you will notice that I make my beet juice in small quantities. This is just my personal preference. You can go ahead and add more water and beets but I find that doing smaller batches gives me more control to monitor color saturation as well as not wasting any beets. How to Make Pink Food Coloring Naturally Using Beets
Wash and scrub the outside of your beet thoroughly. Cut your beet in half. Then cut your 1/2 of your beet into smaller bite size chunks. *The next part goes fast so be ready.
Place 3-4 chunks of beet into a small pot with 1 tablespoon of water. Turn your heat to low. In about 30 seconds or less your water will begin to heat and boil creating your beets to release a deep red color of juice. Only allow the beets to cook for another 30 seconds or less. Too long and your red juice will completely burn off.
Take out your chunks of beet and pour beet juice into a small bowl. Allow beet juice to cool to room temperature. (This is especially important if you are using the beet juice for frosting. Hot beet juice will melt the frosting and not mix.)
Next, add room temperature beet juice to your frosting with an eye dropper or spoon slowly until you reach your desired shade of pink.
Repeat steps 2-4 as needed.
*Don't worry if you burn off all of your beet juice. Simply add more water and start the process over.
