Do you ever just crave chocolate? For me, it has always been after a long grocery shopping trip. The chocolate candy bars always seem to call my name as I wait to check out. Usually, what saves me from falling into the trap of “instant chocolate gratification” is reading the ingredient label. High frutocse corn syrup, sugar, artificial flavors, partially hydrogenated soybean oil, etc. Plus the 24 grams of sugar per candy bar and 250 calories is always a strong deterrent.

Also, the fact that I try really hard to stick to my dairy-free diet puts a big kabush on savoring the milk chocolate. Thankfully, I discovered that I not only can satisfy my chocolate cravings but I can add some healthy benefits too. Yes, you heard that right. I am a firm believer that although some food is meant for pleasure – nothing we eat should be void of nutrients. I am constantly thinking of ways that I can revamp classic foods in order to make them more nutritious for my family.

The more I learn about coconut the more I realize that this “fad” food won’t be going out of style any time soon. The fat content of coconut is unlike it’s competitors. Coconut is composed of medium chain fatty acids. Why is this so great? For coconut to be turned into fuel it only has to do a 3 step process. Other oils have to go through a 26 step process before your body can use it as energy. This is one of the great reasons why coconut oil is a great way to keep unwanted fat away and is recommended for fat loss. Yield: 8-10 (Depending on big you make your chunks)
Ingredients
Instructions
  1. Chop cashews and set aside. Measure out flaked coconut and chia seeds.
  2. Place all of your chocolate chips in pyrex bowl and make a double boiler. Make sure that your water does not touch the bottom of the pyrex bowl.
  3. Stir chocolate chips until they melt completely. Carefully, scrap melted chocolate onto a baking sheet and try to spread the chocolate evenly.
  4. Sprinkle toppings and place chocolate bark in the freezer for 1 hour (uncovered).
  5. Keep chocolate bark stored in covered tupperware in the fridge.
Notes

Since you will need to add your toppings to your chocolate bark while the chocolate is still hot be sure to have all of your ingredients ready to go as well as your pan lined with parchment paper.

I used a 11x8.5 baking pan that a slight lip on it. My chocolate also did not cover the whole baking pan.
